Ingredients
  

Salad Base

  • 4 cups mixed greens such as arugula, spinach, or spring mix
  • ½ cup dried cranberries
  • cup feta cheese crumbled
  • ¼ cup toasted walnuts or pecans

Dressing

  • ¼ cup olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • salt and pepper to taste

Instructions
 

  • In a large bowl, combine the mixed greens, dried cranberries, crumbled feta, and toasted nuts.
  • In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well emulsified.
  • Drizzle the dressing over the salad just before serving and toss gently to coat.

Notes

Optional additions include sliced apples, pomegranate seeds, or roasted squash for extra flavor and texture.
