Salmon Bites

fresh salmon fillets
cut into 1-inch cubes

buttermilk
for marinating

hot sauce
Coating

all-purpose flour

cornstarch

garlic powder

paprika

black pepper

vegetable oil
for frying
Instructions
In a bowl, mix buttermilk and hot sauce. Add salmon bites and let marinate for 10 minutes.
In another bowl, combine flour, cornstarch, garlic powder, paprika, black pepper, and salt.
Remove salmon bites from marinade and coat them evenly in the flour mixture.
Heat vegetable oil in a deep fryer to 350°F (175°C).
Fry salmon bites in batches for 2-3 minutes until golden brown and crispy.
Remove from oil and drain on paper towels. Serve hot with dipping sauce.

Notes
For extra crunch, double coat the salmon by dipping it back into the buttermilk and re-coating with the flour mixture before frying.
