Ingredients
  

Salmon Bites

  • 1 lb fresh salmon fillets cut into 1-inch cubes
  • 1 cup buttermilk for marinating
  • 1 tbsp hot sauce

Coating

  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 cups vegetable oil for frying

Instructions
 

  • In a bowl, mix buttermilk and hot sauce. Add salmon bites and let marinate for 10 minutes.
  • In another bowl, combine flour, cornstarch, garlic powder, paprika, black pepper, and salt.
  • Remove salmon bites from marinade and coat them evenly in the flour mixture.
  • Heat vegetable oil in a deep fryer to 350°F (175°C).
  • Fry salmon bites in batches for 2-3 minutes until golden brown and crispy.
  • Remove from oil and drain on paper towels. Serve hot with dipping sauce.

Notes

For extra crunch, double coat the salmon by dipping it back into the buttermilk and re-coating with the flour mixture before frying.
