  • 1.5 lbs ground chicken
  • 8 oz penne pasta uncooked
  • 2 cups chicken broth
  • 1 cup marinara sauce
  • ½ cup heavy cream
  • 2 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup grape tomatoes halved
  • ½ cup red onion diced
  • Italian seasoning to taste

Instructions
 

  • Heat a large skillet over medium heat. Add ground chicken and cook for 5-7 minutes, breaking it apart as it browns.
  • Add diced onions and sauté for another 3-4 minutes until softened.
  • Stir in uncooked pasta, chicken broth, marinara sauce, and heavy cream. Mix well and bring to a simmer.
  • Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
  • In the last 2 minutes, add spinach and grape tomatoes, stirring until wilted.
  • Remove from heat and mix in mozzarella and Parmesan cheese. Stir until melted.
  • Serve immediately, garnished with fresh basil and extra Parmesan if desired.

For extra flavor, try adding red pepper flakes or swapping mozzarella for cheddar. Leftovers can be refrigerated for up to 4 days and reheated with a splash of broth to maintain creaminess.
